2001 Ford Explorer A/C Not Cold Enough

I have a 1997 Acura 1.6EL with 241,000 km on it. The thermostat that tells me if engine is too hot or cold started acting up. I changed the thermostat. Still same problem though.
Can you tell me how to remove the door lock striker on my 1990 Ford F-150 truck? The plastic on the striker is gone. Can the plastic be replaced without buying a striker?
I have two vehicles a 1997 Dodge Ram Extra Cab pickup 5.9 engine and a 1998 dodge Ram Passenger Van 3500 also 5.9 engine. What happens is on acceleration in both vehicles the air stops blowing from the AC vents and starts blowing through the defrost vents once the vehicle is up to speed or the gas pedal is released the air goes back to the AC vents.
